NEW! FOOD REGULATIONS


During the 2017 Connecticut legislative session, a Senate bill #901 was passed to adopt the FDA Food Code.  The new code will become enforceable on July 1, 2018 and will replace the following current food regulations: 19-13-B40, 19-13-B42, 19-13-B48, 19-13-B49.


On July 1, 2018, local food inspectors will begin conducting food establishment inspections based on the FDA Food Code using a new inspection form.  In the interim, local food inspectors will be trained on the new code and information to share with industry will be made available.

NEW! VARIANCE FOR ACIDIFICATION OF SUSHI RICE

AND SOUS VIDE COOKING


Effective upon passage of Senate Bill #901, and until June 30, 2018, food service establishments will be able to request a variance from the Commissioner of Public Health to allow acidification of sushi rice and the sous vide cooking process.  Food service establishments that seek either or both of these processes must submit a request on the this form (variance form) to:
